Ingredients
Method
- If using ground beef or pork, brown it in a skillet over medium-high heat for 5–6 minutes, breaking it apart as it cooks. Drain excess fat. This step is optional but adds deeper flavor. Smoked sausage or kielbasa can be added raw or lightly seared.
- Add the cabbage, browned meat or raw sausage, onion, garlic, undrained diced tomatoes, broth, Worcestershire sauce, smoked paprika, thyme, red pepper flakes, salt, and black pepper to the slow cooker. Stir gently to combine.
- Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the cabbage is fork-tender and the flavors have melded.
- About 25–30 minutes before serving, stir in the dry elbow macaroni. Make sure the noodles are mostly submerged in the liquid. If the mixture looks dry, add a splash of additional broth or water. Cover and switch to HIGH, or continue on HIGH if already cooking there.
- After about 20 minutes, test a piece of macaroni. Once the pasta is tender, taste and adjust the seasoning with additional salt and black pepper as needed.
- Ladle the cabbage and macaroni into bowls, top with fresh chopped parsley, and serve hot. Crusty bread can be served alongside.
Notes
Add the dry macaroni only during the final 20–30 minutes of cooking on HIGH. Adding it at the beginning can result in mushy, overcooked pasta. Make sure there is enough liquid to cover most of the noodles and add extra broth or water if needed.
Do not overfill the slow cooker beyond about two-thirds full. Taste and adjust the seasoning before serving. For a lazy cabbage roll variation, replace the macaroni with about 1/2 cup uncooked rice, use tomato sauce instead of diced tomatoes, and add dill or caraway seed. For an old-fashioned cabbage and noodles variation, omit the meat and tomatoes, use chicken broth, add caraway seed, and use wide egg noodles near the end.
